Ingredients:

  • 1 lb zucchini, sliced into 1/4-inch rounds
  • 3 cloves garlic, thinly sliced or minced
  • 1 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 2 tbsp grated Parmesan cheese
  • 1 tsp red pepper flakes

Instructions:

  1. Wash and dry the zucchini thoroughly. Slice into uniform 1/4-inch rounds and pat dry with a paper towel to ensure a proper sear.
  2. Heat olive oil in a 12-inch cast iron skillet or heavy-bottomed stainless steel pan over medium-high heat until shimmering and just beginning to smoke.
  3. Place zucchini in the pan in a single layer. Let sit undisturbed for 2-3 minutes until a mahogany-colored crust develops.
  4. Flip the zucchini slices and sear for another 2 minutes.
  5. Reduce heat to medium. Push the zucchini to the edges of the pan and add the sliced garlic to the center.
  6. Sauté the garlic for 60 seconds until nutty and golden.
  7. Toss the zucchini and garlic together, remove from heat, and immediately stir in the lemon juice, salt, and pepper.
  8. Sprinkle with grated Parmesan and red pepper flakes just before serving.
