Ingredients:

  • 6 cups cubed seedless watermelon
  • 4 ounces feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup thinly sliced red onion (optional)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon honey or agave nectar (optional)
  • Pinch of sea salt
  • Pinch of freshly ground black pepper

Instructions:

  1. Cube the watermelon and place it in a large mixing bowl.
  2. Add the crumbled feta, chopped mint, and thinly sliced red onion (if using) to the bowl with the watermelon.
  3. In a small bowl or jar, whisk together the lime juice, olive oil, honey (if using), salt, and pepper.
  4. Pour the lime dressing over the watermelon mixture.
  5. Gently toss the salad to combine, being careful not to mash the watermelon.
  6. Serve immediately for the best flavor and texture. Alternatively, chill for a short period (no more than 30 minutes) before serving.
