Ingredients:
- 6 cups cubed seedless watermelon
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh mint leaves, roughly chopped
- 1/4 cup thinly sliced red onion (optional)
- 2 tablespoons fresh lime juice
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon honey or agave nectar (optional)
- Pinch of sea salt
- Pinch of freshly ground black pepper
Instructions:
- Cube the watermelon and place it in a large mixing bowl.
- Add the crumbled feta, chopped mint, and thinly sliced red onion (if using) to the bowl with the watermelon.
- In a small bowl or jar, whisk together the lime juice, olive oil, honey (if using), salt, and pepper.
- Pour the lime dressing over the watermelon mixture.
- Gently toss the salad to combine, being careful not to mash the watermelon.
- Serve immediately for the best flavor and texture. Alternatively, chill for a short period (no more than 30 minutes) before serving.
