Ingredients:

  • 1 cup (125g) All-Purpose Flour, plus more for dusting
  • 1 tsp (5g) Instant Yeast
  • 1 tsp (6g) Sugar
  • 1/2 tsp (3g) Salt
  • 1 tbsp (15ml) Olive Oil, plus more for greasing
  • 1/2 cup (120ml) Warm Water (around 110°F/43°C)
  • 1 tbsp (15ml) Olive Oil
  • 1/2 small Yellow Onion, finely chopped (approx. 50g)
  • 2 cloves Garlic, minced (approx. 6g)
  • 1 (28oz/794g) can Crushed Tomatoes
  • 1 tsp (5ml) Balsamic Vinegar
  • 1/2 tsp (3g) Dried Oregano
  • 1/4 tsp (1.5g) Red Pepper Flakes (optional)
  • Salt and Black Pepper to taste
  • 1 cup (140g) Raw Cashews, soaked in hot water for at least 2 hours (or overnight)
  • 2 tbsp (30ml) Lemon Juice
  • 2 tbsp (30ml) Nutritional Yeast
  • 1 tbsp (15ml) Olive Oil
  • 1/4 cup (60ml) Water, plus more as needed
  • 1/2 tsp (3g) Garlic Powder
  • 1/4 tsp (1.5g) Salt
  • 1 cup (115g) mixed sliced Mushrooms (Cremini, Shiitake, Oyster - whatever you fancy!)
  • 1/2 cup (60g) halved Cherry Tomatoes
  • 1/4 cup (25g) thinly sliced Red Onion
  • 1/4 cup (15g) chopped fresh Basil, for garnish
  • Vegan Parmesan (optional, for sprinkling)

Instructions:

  1. Prepare the Dough (or Unpack Store-Bought): If making from scratch, combine dry ingredients, add wet, knead, and let rise until doubled. Alternatively, preheat oven and prepare store bought dough as per the packet instructions.
  2. Make the Tomato Sauce: Sauté onion and garlic in olive oil. Add crushed tomatoes, balsamic vinegar, oregano, red pepper flakes (if using), salt, and pepper. Simmer until slightly thickened.
  3. Prepare the Cashew Ricotta: Drain soaked cashews. Blend cashews, lemon juice, nutritional yeast, olive oil, water, garlic powder, and salt until smooth and creamy. Add more water if needed to reach desired consistency.
  4. Assemble the Pizza Bites: Roll out dough (if homemade) and cut into desired bite-sized shapes (squares, circles, etc.). Place on a parchment-lined baking sheet.
  5. Top the Pizza Bites: Spread a thin layer of tomato sauce on each bite. Dollop with cashew ricotta. Add sliced mushrooms, halved cherry tomatoes, and red onion.
  6. Bake: Bake in a preheated oven until the crust is golden brown and the toppings are slightly softened (typically around 15-20 minutes).
  7. Garnish & Serve: Garnish with fresh basil and vegan parmesan (if using). Serve immediately.
