Ingredients:
- 6 medium ripe peaches, peeled and sliced (about 900g)
- 1/2 cup (100g) granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 2 tablespoons (30g) unsalted butter, cut into small pieces
- 1 cup (120g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (240ml) milk
- 1/2 cup (115g) unsalted butter, melted
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, combine sliced peaches, sugar, flour, cinnamon, and lemon juice. Toss gently to coat.
- Spread the peach mixture evenly into the baking dish and dot with butter pieces.
- In the same bowl (no need to wash!), whisk together flour, sugar, baking powder, and salt.
- Stir in milk until just combined. Gently stir in melted butter until batter is smooth.
- Pour batter evenly over the peach mixture.
- Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool slightly before serving.
