Ingredients:

  • 6 medium ripe peaches, peeled and sliced (about 900g)
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 2 tablespoons (30g) unsalted butter, cut into small pieces
  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (240ml) milk
  • 1/2 cup (115g) unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches, sugar, flour, cinnamon, and lemon juice. Toss gently to coat.
  3. Spread the peach mixture evenly into the baking dish and dot with butter pieces.
  4. In the same bowl (no need to wash!), whisk together flour, sugar, baking powder, and salt.
  5. Stir in milk until just combined. Gently stir in melted butter until batter is smooth.
  6. Pour batter evenly over the peach mixture.
  7. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let cool slightly before serving.
