Ingredients:
- 1 lb fresh figs, stems removed and quartered
- 1/2 cup granulated sugar
- 2 tbsp honey
- 1 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1/4 tsp sea salt
Instructions:
- Place the quartered figs, sugar, and honey into a medium saucepan and stir gently to coat the fruit. Let the mixture sit for 5–10 minutes to allow the sugar to draw out the natural juices.
- Bring the mixture to a gentle boil over medium heat, then immediately reduce to a simmer. Stir occasionally and use a potato masher or fork to crush some of the fruit for a rustic texture.
- Stir in the lemon juice, vanilla extract, and sea salt. Continue simmering for 20–25 minutes.
- Perform the cold plate test: drop a small spoonful of jam onto a frozen plate, wait 30 seconds, and push the edge with your finger. If the surface wrinkles and does not run back, the jam is set.
