Ingredients:

  • 1 lb fresh figs, stems removed and quartered
  • 1/2 cup granulated sugar
  • 2 tbsp honey
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Instructions:

  1. Place the quartered figs, sugar, and honey into a medium saucepan and stir gently to coat the fruit. Let the mixture sit for 5–10 minutes to allow the sugar to draw out the natural juices.
  2. Bring the mixture to a gentle boil over medium heat, then immediately reduce to a simmer. Stir occasionally and use a potato masher or fork to crush some of the fruit for a rustic texture.
  3. Stir in the lemon juice, vanilla extract, and sea salt. Continue simmering for 20–25 minutes.
  4. Perform the cold plate test: drop a small spoonful of jam onto a frozen plate, wait 30 seconds, and push the edge with your finger. If the surface wrinkles and does not run back, the jam is set.
