Ingredients:
- 1 lb fresh ripe figs, stemmed and quartered
- 2 tbsp fresh lemon juice
- 1/2 cup granulated sugar
- 2 tbsp honey
- 1 tsp vanilla extract
- 1 tbsp water
Instructions:
- Place the quartered figs, sugar, honey, and lemon juice into a small heavy-bottomed saucepan. Stir gently to combine and let the mixture sit for 5 to 10 minutes to allow the sugar to dissolve and figs to release their juices.
- Add the water and place the pan over medium heat. Bring the mixture to a gentle boil, then immediately reduce the heat to low.
- Simmer uncovered, stirring occasionally to prevent scorching, for 20–25 minutes until the figs break down and the liquid reduces into a glossy, thick syrup.
- Perform the plate test: place a small dollop of jam on a chilled plate; if it wrinkles when pushed with your finger and doesn't run, it is set.
- Stir in the vanilla extract, remove from heat, and transfer to a small glass jar.
