Ingredients:
- 225g unsalted butter, melted and cooled
- 300g brown sugar, packed
- 100g granulated sugar
- 250g creamy stabilized peanut butter
- 2 large eggs, room temperature
- 10ml pure vanilla extract
- 315g all-purpose flour
- 5g baking soda
- 3g sea salt
- 24 Nutter Butter cookies
- 200g white chocolate melting wafers
- 100g red candy melts
- 30g mini chocolate chips
- 20g small red candies
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large mixing bowl, whisk the melted butter with the brown sugar and granulated sugar until the mixture looks like wet sand.
- Vigorously whisk in the room-temperature eggs, vanilla extract, and creamy peanut butter until the batter becomes glossy, smooth, and fully emulsified.
- Sift the all-purpose flour, baking soda, and sea salt directly into the wet mixture. Use a spatula to gently fold the ingredients together just until no white streaks remain.
- Spread the dough evenly into the prepared baking pan. Bake for 25 minutes. The edges should be golden but the center should remain slightly soft to ensure a fudgy texture.
- While the bars cool, prepare the Santa decorations by dipping the top third of each Nutter Butter in melted red candy melts (for the hat) and the bottom half in white chocolate (for the beard).
- Apply mini chocolate chips for eyes and a red candy for the nose while the chocolate is still wet. Once set, place one Santa on each cut bar.
