Ingredients:
- 1 lb carrots, peeled and julienned
- 1/2 medium red onion, thinly sliced
- 2 cloves garlic, smashed
- 1 cup apple cider vinegar
- 1/2 cup water
- 1/4 cup granulated sugar
- 1 tbsp kosher salt
- 1 tsp whole black peppercorns
- 1/2 tsp red pepper flakes
Instructions:
- Slice the carrots into thin matchsticks (julienne) or ribbons and thinly slice the red onion. Pack the carrots, onions, and smashed garlic cloves tightly into a glass mason jar, alternating layers.
- Combine apple cider vinegar, water, sugar, and salt in a small saucepan over medium heat. Stir occasionally until the liquid reaches a gentle simmer and the sugar and salt have completely dissolved.
- Remove the brine from heat immediately and carefully pour it over the vegetables in the jar, ensuring they are completely submerged.
- Add the whole black peppercorns and red pepper flakes to the jar.
- Seal the lid and let the jar sit at room temperature for 30 minutes, then transfer to the refrigerator to chill for 1 hour before serving.
