Ingredients:

  • 1 lb carrots, peeled and julienned
  • 1/2 medium red onion, thinly sliced
  • 2 cloves garlic, smashed
  • 1 cup apple cider vinegar
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 tbsp kosher salt
  • 1 tsp whole black peppercorns
  • 1/2 tsp red pepper flakes

Instructions:

  1. Slice the carrots into thin matchsticks (julienne) or ribbons and thinly slice the red onion. Pack the carrots, onions, and smashed garlic cloves tightly into a glass mason jar, alternating layers.
  2. Combine apple cider vinegar, water, sugar, and salt in a small saucepan over medium heat. Stir occasionally until the liquid reaches a gentle simmer and the sugar and salt have completely dissolved.
  3. Remove the brine from heat immediately and carefully pour it over the vegetables in the jar, ensuring they are completely submerged.
  4. Add the whole black peppercorns and red pepper flakes to the jar.
  5. Seal the lid and let the jar sit at room temperature for 30 minutes, then transfer to the refrigerator to chill for 1 hour before serving.
