Ingredients:
- 2 lbs English cucumbers, thinly sliced
- 1/2 cup red onion, thinly sliced into half-moons
- 1/4 cup fresh dill, chopped
- 1/2 cup apple cider vinegar
- 2 tbsp granulated sugar
- 1 tsp salt
- 1/2 tsp black pepper
Instructions:
- Slice the cucumbers into thin rounds (about 1/8 inch). Slice the red onions as thinly as possible and place both in a large mixing bowl.
- In a small jar or bowl, whisk together the apple cider vinegar, sugar, salt, and pepper until the sugar granules are no longer visible.
- Pour the dressing over the cucumbers and onions. Toss gently to ensure every slice is coated, then fold in the fresh dill.
- Cover the bowl and let the salad rest in the refrigerator for 20 minutes before serving.
