Ingredients:

  • 2 lbs English cucumbers, thinly sliced
  • 1/2 cup red onion, thinly sliced into half-moons
  • 1/4 cup fresh dill, chopped
  • 1/2 cup apple cider vinegar
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Slice the cucumbers into thin rounds (about 1/8 inch). Slice the red onions as thinly as possible and place both in a large mixing bowl.
  2. In a small jar or bowl, whisk together the apple cider vinegar, sugar, salt, and pepper until the sugar granules are no longer visible.
  3. Pour the dressing over the cucumbers and onions. Toss gently to ensure every slice is coated, then fold in the fresh dill.
  4. Cover the bowl and let the salad rest in the refrigerator for 20 minutes before serving.
