Ingredients:

  • 2 cups cooked white rice
  • 1 cup cooked chicken breast, diced
  • 1 cup mixed vegetables (frozen peas, carrots, corn)
  • 2 large eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions:

  1. Dice chicken, slice green onions, and mince garlic.
  2. Heat vegetable oil in a large wok or frying pan over medium-high heat.
  3. Pour in beaten eggs, scramble until just set, then remove and set aside.
  4. Add minced garlic to the pan and sauté for about 30 seconds until fragrant.
  5. Stir in diced chicken and vegetables, cooking for 3-4 minutes until warmed through.
  6. Add cooked rice, soy sauce, and sesame oil. Stir well to combine.
  7. Fold in scrambled eggs, toss everything, and cook for an additional 2-3 minutes.
  8. Adjust seasoning with salt and pepper, garnish with green onions, and serve hot.
