Ingredients:
- 2 cups cooked white rice
- 1 cup cooked chicken breast, diced
- 1 cup mixed vegetables (frozen peas, carrots, corn)
- 2 large eggs
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 2 green onions, sliced
- Salt and pepper to taste
Instructions:
- Dice chicken, slice green onions, and mince garlic.
- Heat vegetable oil in a large wok or frying pan over medium-high heat.
- Pour in beaten eggs, scramble until just set, then remove and set aside.
- Add minced garlic to the pan and sauté for about 30 seconds until fragrant.
- Stir in diced chicken and vegetables, cooking for 3-4 minutes until warmed through.
- Add cooked rice, soy sauce, and sesame oil. Stir well to combine.
- Fold in scrambled eggs, toss everything, and cook for an additional 2-3 minutes.
- Adjust seasoning with salt and pepper, garnish with green onions, and serve hot.
