Ingredients:
- ½ cup (40g) rolled oats (old-fashioned, not instant)
- 1 cup (240ml) milk (dairy or non-dairy)
- 1 tablespoon (15ml) Greek yogurt (optional)
- 1 tablespoon (13g) chia seeds
- 1 tablespoon (15ml) maple syrup
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ cup (30g) grated carrot
- ¼ cup (30g) shredded coconut
- ¼ cup (30g) chopped walnuts or pecans
Instructions:
- In the jar, add rolled oats, chia seeds, cinnamon, and nutmeg. Stir to combine.
- Pour in milk, Greek yogurt (if using), and maple syrup.
- Stir well to ensure all ingredients are combined. Add grated carrot, shredded coconut, and chopped nuts. Stir again.
- Cover the jar with a lid and refrigerate for at least 8 hours, or overnight.
- Give it a good stir before serving. Add extra toppings if desired (fresh fruit, more nuts, a drizzle of honey).
