Ingredients:

  • ½ cup (40g) rolled oats (old-fashioned, not instant)
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 1 tablespoon (15ml) Greek yogurt (optional)
  • 1 tablespoon (13g) chia seeds
  • 1 tablespoon (15ml) maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ cup (30g) grated carrot
  • ¼ cup (30g) shredded coconut
  • ¼ cup (30g) chopped walnuts or pecans

Instructions:

  1. In the jar, add rolled oats, chia seeds, cinnamon, and nutmeg. Stir to combine.
  2. Pour in milk, Greek yogurt (if using), and maple syrup.
  3. Stir well to ensure all ingredients are combined. Add grated carrot, shredded coconut, and chopped nuts. Stir again.
  4. Cover the jar with a lid and refrigerate for at least 8 hours, or overnight.
  5. Give it a good stir before serving. Add extra toppings if desired (fresh fruit, more nuts, a drizzle of honey).
