Ingredients:
- 1 cup (90g) Rolled Oats (Old-fashioned oats, not instant)
- ½ cup (45g) Unsweetened Shredded Coconut
- ½ cup (60g) Chocolate Chips (Semi-sweet or dark chocolate)
- ¼ cup (30g) Chia Seeds
- 1/4 cup (20g) Unsweetened Cocoa Powder
- 1/4 teaspoon Sea Salt (Optional, but enhances the flavour)
- ½ cup (125g) Creamy Peanut Butter (Natural, no-sugar-added preferred)
- ¼ cup (85g) Honey (Or maple syrup for a vegan option)
- 1 teaspoon Vanilla Extract
- 1-2 tablespoons of Water (To adjust consistency if needed)
Instructions:
- In a large mixing bowl, combine the rolled oats, shredded coconut, chocolate chips, chia seeds, cocoa powder, and salt (if using). Whisk together to ensure even distribution.
- Add the peanut butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
- Stir everything together until well combined. The mixture should be slightly sticky.
- If the mixture seems too dry, add 1-2 tablespoons of water, one at a time, until it reaches the desired consistency.
- Cover the bowl and refrigerate the mixture for at least 30 minutes to allow the oats to soften and the mixture to firm up.
- Using a cookie scoop or spoon, scoop out portions of the mixture and roll them into 1-inch balls.
- Roll the balls in shredded coconut, chopped nuts or cacao nibs (optional).
- For firmer energy balls, chill them for an additional 15-30 minutes (optional).
- Store the energy balls in an airtight container in the refrigerator for up to 1 week.
