Ingredients:

  • 1 cup (90g) Rolled Oats (Old-fashioned oats, not instant)
  • ½ cup (45g) Unsweetened Shredded Coconut
  • ½ cup (60g) Chocolate Chips (Semi-sweet or dark chocolate)
  • ¼ cup (30g) Chia Seeds
  • 1/4 cup (20g) Unsweetened Cocoa Powder
  • 1/4 teaspoon Sea Salt (Optional, but enhances the flavour)
  • ½ cup (125g) Creamy Peanut Butter (Natural, no-sugar-added preferred)
  • ¼ cup (85g) Honey (Or maple syrup for a vegan option)
  • 1 teaspoon Vanilla Extract
  • 1-2 tablespoons of Water (To adjust consistency if needed)

Instructions:

  1. In a large mixing bowl, combine the rolled oats, shredded coconut, chocolate chips, chia seeds, cocoa powder, and salt (if using). Whisk together to ensure even distribution.
  2. Add the peanut butter, honey (or maple syrup), and vanilla extract to the dry ingredients.
  3. Stir everything together until well combined. The mixture should be slightly sticky.
  4. If the mixture seems too dry, add 1-2 tablespoons of water, one at a time, until it reaches the desired consistency.
  5. Cover the bowl and refrigerate the mixture for at least 30 minutes to allow the oats to soften and the mixture to firm up.
  6. Using a cookie scoop or spoon, scoop out portions of the mixture and roll them into 1-inch balls.
  7. Roll the balls in shredded coconut, chopped nuts or cacao nibs (optional).
  8. For firmer energy balls, chill them for an additional 15-30 minutes (optional).
  9. Store the energy balls in an airtight container in the refrigerator for up to 1 week.
