Ingredients:
- 2 ripe avocados (about 450g)
- 1/2 cup (120g) canned pumpkin puree (not pumpkin pie filling)
- 1 medium lime, juiced (about 2 tablespoons or 30ml)
- 1/4 cup (60g) red onion, finely diced
- 1 small jalapeño, seeds removed and finely chopped (optional)
- 1 teaspoon (5g) garlic powder
- 1/2 teaspoon (2g) ground cumin
- 1/2 teaspoon (2g) smoked paprika
- Salt, to taste (around 1/2 teaspoon or 3g)
- 2 tablespoons (30ml) fresh cilantro, chopped (optional)
Instructions:
- Gather and measure all ingredients for ease.
- Cut avocados in half, remove the pit, scoop flesh into a mixing bowl, and mash with a fork until mostly smooth.
- Stir in the canned pumpkin puree until well combined.
- Mix in lime juice, diced red onion, jalapeño, garlic powder, cumin, smoked paprika, and salt.
- Taste the guacamole and adjust seasoning as desired. Add more lime juice or salt if needed.
- Optionally, fold in freshly chopped cilantro before serving.
