Ingredients:

  • 2 ripe avocados (about 450g)
  • 1/2 cup (120g) canned pumpkin puree (not pumpkin pie filling)
  • 1 medium lime, juiced (about 2 tablespoons or 30ml)
  • 1/4 cup (60g) red onion, finely diced
  • 1 small jalapeño, seeds removed and finely chopped (optional)
  • 1 teaspoon (5g) garlic powder
  • 1/2 teaspoon (2g) ground cumin
  • 1/2 teaspoon (2g) smoked paprika
  • Salt, to taste (around 1/2 teaspoon or 3g)
  • 2 tablespoons (30ml) fresh cilantro, chopped (optional)

Instructions:

  1. Gather and measure all ingredients for ease.
  2. Cut avocados in half, remove the pit, scoop flesh into a mixing bowl, and mash with a fork until mostly smooth.
  3. Stir in the canned pumpkin puree until well combined.
  4. Mix in lime juice, diced red onion, jalapeño, garlic powder, cumin, smoked paprika, and salt.
  5. Taste the guacamole and adjust seasoning as desired. Add more lime juice or salt if needed.
  6. Optionally, fold in freshly chopped cilantro before serving.
