Ingredients:
- 3 ½ cups bread flour
- 1 cup whole wheat flour
- 1 packet active dry yeast
- ⅔ cup warm water (110°F/43°C)
- ¼ cup honey
- ¼ cup molasses
- 2 tablespoons unsalted butter, melted
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 tablespoons melted butter (for topping)
- 1 tablespoon oat flour (optional)
- 1 tablespoon sesame seeds (optional)
Instructions:
- Combine warm water with honey and sprinkle yeast on top; allow it to bloom (5-10 minutes).
- In a large bowl, whisk together bread flour, whole wheat flour, salt, cinnamon, and molasses.
- Once yeast is bubbly, mix in melted butter and then add the dry mixture gradually, stirring until a shaggy dough forms.
- Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.
- Place in a greased bowl, cover with plastic wrap or a towel, and let it rise in a warm place until doubled in size (about 1 hour).
- Punch down the dough, shape it into a loaf, and place it on a baking sheet lined with parchment paper.
- Cover and let rise again for 30 minutes until puffed up.
- Preheat the oven to 350°F (175°C).
- Brush with melted butter and sprinkle with oat flour and sesame seeds, if using. Bake for 25-30 minutes until golden brown.
- Let cool on a wire rack before slicing; enjoy warm or at room temperature.
