Ingredients:

  • 3 ½ cups bread flour
  • 1 cup whole wheat flour
  • 1 packet active dry yeast
  • ⅔ cup warm water (110°F/43°C)
  • ¼ cup honey
  • ¼ cup molasses
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 tablespoons melted butter (for topping)
  • 1 tablespoon oat flour (optional)
  • 1 tablespoon sesame seeds (optional)

Instructions:

  1. Combine warm water with honey and sprinkle yeast on top; allow it to bloom (5-10 minutes).
  2. In a large bowl, whisk together bread flour, whole wheat flour, salt, cinnamon, and molasses.
  3. Once yeast is bubbly, mix in melted butter and then add the dry mixture gradually, stirring until a shaggy dough forms.
  4. Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.
  5. Place in a greased bowl, cover with plastic wrap or a towel, and let it rise in a warm place until doubled in size (about 1 hour).
  6. Punch down the dough, shape it into a loaf, and place it on a baking sheet lined with parchment paper.
  7. Cover and let rise again for 30 minutes until puffed up.
  8. Preheat the oven to 350°F (175°C).
  9. Brush with melted butter and sprinkle with oat flour and sesame seeds, if using. Bake for 25-30 minutes until golden brown.
  10. Let cool on a wire rack before slicing; enjoy warm or at room temperature.
