Ingredients:
- 3 cups (270g) rolled oats (old-fashioned, not instant)
- 1 cup (100g) chopped nuts (e.g., almonds, walnuts, pecans)
- 1/2 cup (50g) seeds (e.g., pumpkin, sunflower, flax)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup (120ml) maple syrup (or honey)
- 1/4 cup (60ml) coconut oil, melted (or other neutral oil)
- 1 teaspoon vanilla extract
- 1 cup (150g) raisins
Instructions:
- Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the oats, nuts, seeds, cinnamon, nutmeg, and salt. Stir to evenly distribute.
- In a separate bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.
- Spread the granola mixture in an even layer on the prepared baking sheet.
- Bake for 30-40 minutes, stirring halfway through, until golden brown and fragrant.
- Remove from the oven and let the granola cool completely on the baking sheet. It will crisp up as it cools.
- Once cooled, stir in the raisins. This is a great homemade granola recipe!
- Store in an airtight container at room temperature for up to 2 weeks.
