Ingredients:

  • 3 cups (270g) rolled oats (old-fashioned, not instant)
  • 1 cup (100g) chopped nuts (e.g., almonds, walnuts, pecans)
  • 1/2 cup (50g) seeds (e.g., pumpkin, sunflower, flax)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) maple syrup (or honey)
  • 1/4 cup (60ml) coconut oil, melted (or other neutral oil)
  • 1 teaspoon vanilla extract
  • 1 cup (150g) raisins

Instructions:

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, nuts, seeds, cinnamon, nutmeg, and salt. Stir to evenly distribute.
  3. In a separate bowl, whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.
  5. Spread the granola mixture in an even layer on the prepared baking sheet.
  6. Bake for 30-40 minutes, stirring halfway through, until golden brown and fragrant.
  7. Remove from the oven and let the granola cool completely on the baking sheet. It will crisp up as it cools.
  8. Once cooled, stir in the raisins. This is a great homemade granola recipe!
  9. Store in an airtight container at room temperature for up to 2 weeks.
