Ingredients:
- 1 small seedless watermelon, cubed (approx. 4 cups / 950g)
- 225g / 8 oz halloumi cheese, sliced into ½-inch thick slices
- 1/2 cup fresh mint leaves, roughly chopped (approx. 15g)
- 1/4 cup red onion, thinly sliced (approx. 30g)
- 3 tablespoons olive oil (45ml)
- 2 tablespoons fresh lime juice (30ml)
- 1 tablespoon honey (15ml)
- 1/2 teaspoon red pepper flakes (optional) (1g)
- Salt and freshly ground black pepper to taste
Instructions:
- Cube the watermelon into bite-sized pieces and place in a large bowl.
- In a small bowl or jar, whisk together olive oil, lime juice, honey, and red pepper flakes (if using). Season with salt and pepper.
- Heat a grill pan or BBQ grill to medium-high heat. Grill the halloumi slices for 2-3 minutes per side, or until golden brown and slightly softened. Watch carefully – it burns easily!
- Add the sliced red onion and chopped mint to the bowl with the watermelon.
- Pour the dressing over the watermelon mixture and toss gently to combine.
- Arrange the grilled halloumi over the salad and serve immediately.
