Ingredients:

  • 1 small seedless watermelon, cubed (approx. 4 cups / 950g)
  • 225g / 8 oz halloumi cheese, sliced into ½-inch thick slices
  • 1/2 cup fresh mint leaves, roughly chopped (approx. 15g)
  • 1/4 cup red onion, thinly sliced (approx. 30g)
  • 3 tablespoons olive oil (45ml)
  • 2 tablespoons fresh lime juice (30ml)
  • 1 tablespoon honey (15ml)
  • 1/2 teaspoon red pepper flakes (optional) (1g)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Cube the watermelon into bite-sized pieces and place in a large bowl.
  2. In a small bowl or jar, whisk together olive oil, lime juice, honey, and red pepper flakes (if using). Season with salt and pepper.
  3. Heat a grill pan or BBQ grill to medium-high heat. Grill the halloumi slices for 2-3 minutes per side, or until golden brown and slightly softened. Watch carefully – it burns easily!
  4. Add the sliced red onion and chopped mint to the bowl with the watermelon.
  5. Pour the dressing over the watermelon mixture and toss gently to combine.
  6. Arrange the grilled halloumi over the salad and serve immediately.
