Ingredients:

  • 4 ears of fresh corn, in husks (or shucked)
  • 4 tablespoons unsalted butter, softened (56g) - optional
  • Salt and freshly ground black pepper, to taste - optional
  • Other toppings like chili powder, lime wedges, parmesan cheese, etc. - optional

Instructions:

  1. Soak corn in husks in cold water for at least 30 minutes (this prevents the husks from burning).
  2. Gently peel back husks, remove silk. Brush corn with melted butter (optional). Pull husks back up around the corn.
  3. Shuck the corn completely, removing husks and silk. Brush corn with melted butter (optional).
  4. Preheat grill to medium heat (about 350-450°F / 175-230°C).
  5. Place the soaked, husk-on corn directly on the grill grates. Grill, turning occasionally, for 15-20 minutes, or until kernels are tender and husks are slightly charred.
  6. Place the shucked corn directly on the grill grates. Grill, turning frequently, for 10-15 minutes, or until kernels are tender and lightly charred. Watch closely to prevent burning!
  7. Carefully remove corn from the grill with tongs. Peel back husks (if grilled husk-on). Season with salt, pepper, and any desired toppings. Serve immediately.
