Ingredients:

  • 1 pound (450g) broccolini, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (25g) grated Parmesan cheese, freshly grated is best!
  • Optional: Red pepper flakes, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and trim the broccolini. Pat completely dry with paper towels.
  3. In a large mixing bowl, toss the broccolini with olive oil, minced garlic, salt, and pepper until evenly coated.
  4. Spread the broccolini in a single layer on the prepared baking sheet. Avoid overcrowding.
  5. Roast for 15-20 minutes, or until the broccolini is tender-crisp and slightly browned at the edges. Keep an eye so it doesn't burn!
  6. Remove the baking sheet from the oven and sprinkle with grated Parmesan cheese.
  7. If desired, broil for 1-2 minutes, watching carefully, until the Parmesan cheese is melted and lightly golden.
  8. Serve immediately. Add red pepper flakes for a kick, if desired.
