Ingredients:
- 1 pound (450g) broccolini, trimmed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup (25g) grated Parmesan cheese, freshly grated is best!
- Optional: Red pepper flakes, to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and trim the broccolini. Pat completely dry with paper towels.
- In a large mixing bowl, toss the broccolini with olive oil, minced garlic, salt, and pepper until evenly coated.
- Spread the broccolini in a single layer on the prepared baking sheet. Avoid overcrowding.
- Roast for 15-20 minutes, or until the broccolini is tender-crisp and slightly browned at the edges. Keep an eye so it doesn't burn!
- Remove the baking sheet from the oven and sprinkle with grated Parmesan cheese.
- If desired, broil for 1-2 minutes, watching carefully, until the Parmesan cheese is melted and lightly golden.
- Serve immediately. Add red pepper flakes for a kick, if desired.
