Ingredients:
- 2 large eggs (100g)
- 1 tablespoon milk (15 ml)
- Salt and freshly ground black pepper, to taste
- 1 tablespoon unsalted butter (14g)
- 2 slices cooked bacon, chopped (30g)
- 1/4 cup shredded cheddar cheese (28g)
- 1 tablespoon chopped fresh chives (3g)
- 2 slices of your favourite bread (approximately 60g)
- Optional: Butter or spread for toast
Instructions:
- In a small bowl, whisk together the eggs, milk, salt, and pepper until combined.
- Toast the bread slices to your desired level of doneness. Butter, if desired, and set aside.
- If bacon needs cooking, cook it. Chop it in small pieces.
- Melt the butter in the non-stick skillet over medium-low heat.
- Pour the egg mixture into the skillet. Cook, gently pushing the eggs around with a spatula, until they are mostly set but still slightly moist.
- Sprinkle the shredded cheddar cheese and chopped bacon over the eggs. Continue cooking for another minute, until the cheese is melted and the eggs are cooked through.
- Remove from heat. Stir in the chopped chives. Spoon the cheesy bacon scramble onto the toasted bread. Serve immediately.
