Ingredients:

  • 2 large eggs (100g)
  • 1 tablespoon milk (15 ml)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon unsalted butter (14g)
  • 2 slices cooked bacon, chopped (30g)
  • 1/4 cup shredded cheddar cheese (28g)
  • 1 tablespoon chopped fresh chives (3g)
  • 2 slices of your favourite bread (approximately 60g)
  • Optional: Butter or spread for toast

Instructions:

  1. In a small bowl, whisk together the eggs, milk, salt, and pepper until combined.
  2. Toast the bread slices to your desired level of doneness. Butter, if desired, and set aside.
  3. If bacon needs cooking, cook it. Chop it in small pieces.
  4. Melt the butter in the non-stick skillet over medium-low heat.
  5. Pour the egg mixture into the skillet. Cook, gently pushing the eggs around with a spatula, until they are mostly set but still slightly moist.
  6. Sprinkle the shredded cheddar cheese and chopped bacon over the eggs. Continue cooking for another minute, until the cheese is melted and the eggs are cooked through.
  7. Remove from heat. Stir in the chopped chives. Spoon the cheesy bacon scramble onto the toasted bread. Serve immediately.
