Ingredients:
- 1 lb (450g) ground beef
- 1 medium onion, diced (approx. 100g)
- 2 cloves garlic, minced
- 1 tsp (5g) ground cumin
- 1 tsp (5g) chili powder
- Salt & pepper to taste
- 1/2 cup (120ml) beef broth or water
- 8-10 small corn tortillas (about 6 inches in diameter)
- Vegetable oil for frying
- 1 cup (240ml) sour cream
- 1 tbsp (15ml) lime juice
- 1 tsp (5g) chopped fresh cilantro (optional)
- Pinch of salt
Instructions:
- In a large skillet, heat a splash of oil over medium heat.
- Add diced onion and garlic; sauté until softened (3-4 minutes).
- Add ground beef, cumin, chili powder, salt, and pepper; cook until browned.
- Stir in beef broth and simmer until liquid is reduced (5-7 minutes). Remove from heat.
- In a separate skillet, warm the tortillas briefly over low heat until pliable.
- Stack warmed tortillas and cover with a clean kitchen towel to keep warm.
- Spoon a portion of the beef filling onto one edge of a tortilla.
- Roll tightly and secure with a toothpick if necessary. Repeat with remaining tortillas.
- Heat vegetable oil in a deep pan to approximately 350°F (175°C).
- Carefully add rolled flautas, frying until golden brown on all sides (about 2-3 minutes per side).
- Remove from oil and drain on paper towels.
- In a mixing bowl, combine sour cream, lime juice, cilantro, and salt.
- Mix until smooth and adjust seasoning to taste.
