Ingredients:

  • 12 oz (340g) whole wheat spaghetti or noodles of choice
  • 1/4 cup (60ml) tahini or sesame paste
  • 1/4 cup (60ml) soy sauce (low sodium if preferred)
  • 2 tablespoons (30ml) rice vinegar
  • 2 tablespoons (30ml) honey or maple syrup
  • 2 teaspoons (10ml) sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 2–3 tablespoons water (to thin the sauce if necessary)
  • 2 tablespoons sesame seeds, toasted
  • 2 green onions, sliced thin
  • 1 cup (150g) steamed broccoli or bok choy (optional)

Instructions:

  1. Boil water in a large pot. Add salt and noodles, cooking according to package directions until al dente. Drain noodles and rinse with cold water to stop cooking.
  2. In a mixing bowl, combine tahini, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and whisk until smooth. Adjust consistency with water as needed.
  3. In a large serving bowl, add cooked noodles. Pour the prepared sauce over the noodles and toss until evenly coated.
  4. Top with toasted sesame seeds, sliced green onions, and steamed vegetables if using.
  5. Enjoy your creamy sesame noodles warm, at room temperature, or chilled.
