Ingredients:
- 12 oz (340g) whole wheat spaghetti or noodles of choice
- 1/4 cup (60ml) tahini or sesame paste
- 1/4 cup (60ml) soy sauce (low sodium if preferred)
- 2 tablespoons (30ml) rice vinegar
- 2 tablespoons (30ml) honey or maple syrup
- 2 teaspoons (10ml) sesame oil
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 2–3 tablespoons water (to thin the sauce if necessary)
- 2 tablespoons sesame seeds, toasted
- 2 green onions, sliced thin
- 1 cup (150g) steamed broccoli or bok choy (optional)
Instructions:
- Boil water in a large pot. Add salt and noodles, cooking according to package directions until al dente. Drain noodles and rinse with cold water to stop cooking.
- In a mixing bowl, combine tahini, soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, and whisk until smooth. Adjust consistency with water as needed.
- In a large serving bowl, add cooked noodles. Pour the prepared sauce over the noodles and toss until evenly coated.
- Top with toasted sesame seeds, sliced green onions, and steamed vegetables if using.
- Enjoy your creamy sesame noodles warm, at room temperature, or chilled.
