Ingredients:

  • 4 cups all-purpose flour (480g)
  • 1 packet (2¼ tsp) active dry yeast (7g)
  • 1¾ cups warm water (about 110°F/43°C) (415ml)
  • 1 tablespoon sugar (12g)
  • 2 teaspoons kosher salt (10g)
  • 2 tablespoons unsalted butter, melted (28g)
  • 1 cup cream cheese, softened (225g)
  • ½ cup powdered sugar (60g)
  • 1 teaspoon vanilla extract (5ml)
  • 2 tablespoons chocolate chips or fruit preserves (optional)
  • ½ cup baking soda (115g)
  • 10 cups water (2.4 liters)
  • Coarse sea salt for sprinkling

Instructions:

  1. In a bowl, mix warm water, sugar, and yeast; let sit until frothy.
  2. In a separate bowl, combine flour and salt.
  3. Make a well in the flour mixture, add melted butter and yeast mixture.
  4. Mix until a dough forms, then knead for 5-7 minutes until smooth.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let rise for 30 minutes.
  6. In a bowl, combine cream cheese, powdered sugar, and vanilla until smooth.
  7. If desired, mix in chocolate chips or preserves for added flavor.
  8. Divide the dough into 12 equal pieces.
  9. Roll each piece into a long rope, about 18 inches long.
  10. Shape into a pretzel form, tucking one end under.
  11. In a large pot, bring water and baking soda to a boil.
  12. Gently place pretzels into the boiling water for 30 seconds each.
  13. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  14. Using a pastry bag, fill each pretzel with the sweet cheese mixture.
  15. Sprinkle with coarse sea salt.
  16. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.
