Ingredients:
- 4 cups all-purpose flour (480g)
- 1 packet (2¼ tsp) active dry yeast (7g)
- 1¾ cups warm water (about 110°F/43°C) (415ml)
- 1 tablespoon sugar (12g)
- 2 teaspoons kosher salt (10g)
- 2 tablespoons unsalted butter, melted (28g)
- 1 cup cream cheese, softened (225g)
- ½ cup powdered sugar (60g)
- 1 teaspoon vanilla extract (5ml)
- 2 tablespoons chocolate chips or fruit preserves (optional)
- ½ cup baking soda (115g)
- 10 cups water (2.4 liters)
- Coarse sea salt for sprinkling
Instructions:
- In a bowl, mix warm water, sugar, and yeast; let sit until frothy.
- In a separate bowl, combine flour and salt.
- Make a well in the flour mixture, add melted butter and yeast mixture.
- Mix until a dough forms, then knead for 5-7 minutes until smooth.
- Place the dough in a greased bowl, cover with a damp cloth, and let rise for 30 minutes.
- In a bowl, combine cream cheese, powdered sugar, and vanilla until smooth.
- If desired, mix in chocolate chips or preserves for added flavor.
- Divide the dough into 12 equal pieces.
- Roll each piece into a long rope, about 18 inches long.
- Shape into a pretzel form, tucking one end under.
- In a large pot, bring water and baking soda to a boil.
- Gently place pretzels into the boiling water for 30 seconds each.
- Remove with a slotted spoon and place on a parchment-lined baking sheet.
- Using a pastry bag, fill each pretzel with the sweet cheese mixture.
- Sprinkle with coarse sea salt.
- Bake in a preheated oven at 425°F (220°C) for 12-15 minutes or until golden brown.
