Ingredients:
- 2 lbs Black Mission figs, stems removed and quartered
- 1/2 cup granulated sugar
- 2 tbsp fresh lemon juice
- 1/4 tsp fine sea salt
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
Instructions:
- Wash the Black Mission figs and pat them dry. Remove the hard stems and cut each fig into quarters.
- Place the quartered figs into a heavy-bottomed pot along with the sugar and lemon juice, tossing gently to ensure the fruit is coated.
- Place the pot over medium-high heat and bring the mixture to a steady boil, stirring frequently to prevent the sugar from sticking.
- Simmer for 10–12 minutes, or until the liquid has reduced by half and the mixture looks glossy.
- Stir in the sea salt, cinnamon, and vanilla extract.
- Test for the set by placing a small spoonful of preserves on a chilled plate for 30 seconds; if it holds its shape, remove from heat immediately.
