Ingredients:

  • 2 lbs Black Mission figs, stems removed and quartered
  • 1/2 cup granulated sugar
  • 2 tbsp fresh lemon juice
  • 1/4 tsp fine sea salt
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract

Instructions:

  1. Wash the Black Mission figs and pat them dry. Remove the hard stems and cut each fig into quarters.
  2. Place the quartered figs into a heavy-bottomed pot along with the sugar and lemon juice, tossing gently to ensure the fruit is coated.
  3. Place the pot over medium-high heat and bring the mixture to a steady boil, stirring frequently to prevent the sugar from sticking.
  4. Simmer for 10–12 minutes, or until the liquid has reduced by half and the mixture looks glossy.
  5. Stir in the sea salt, cinnamon, and vanilla extract.
  6. Test for the set by placing a small spoonful of preserves on a chilled plate for 30 seconds; if it holds its shape, remove from heat immediately.
