  • 2 cups shredded zucchini
  • 1/2 cup chopped walnuts

Instructions:

  1. Grate the zucchini using the medium holes of a box grater and measure exactly 2 cups, keeping the natural juices.
  2. In a large bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until the mixture is smooth and slightly pale.
  3. In a separate bowl, sift together the all-purpose flour, baking soda, salt, and ground cinnamon.
  4. Gradually stir the dry ingredients into the wet ingredients until just combined.
  5. Gently fold in the shredded zucchini and chopped walnuts using a rubber spatula to avoid over-mixing.
  6. Pour the batter into a greased 9x5-inch loaf pan.
  7. Bake at 350°F (175°C) for 50-60 minutes, or until a toothpick inserted into the center comes out clean and the crust is mahogany-colored.
