Ingredients:
- 1 1/2 cups (192g) all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar
- 1 large ripe banana, mashed (approximately 1/2 cup)
- 1 1/4 cups (300ml) milk (dairy or non-dairy)
- 1 large egg
- 2 tablespoons unsalted butter, melted
- Butter or cooking spray for greasing the griddle
- 4 tablespoons (57g) unsalted butter
- 1/2 cup (100g) packed light brown sugar
- 1/4 cup (60ml) heavy cream
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 2 large ripe bananas, sliced
- 2 tablespoons dark rum (optional)
Instructions:
- Whisk together flour, baking powder, baking soda, salt, and sugar. In a separate bowl, combine mashed banana, milk, egg, and melted butter. Gently fold the wet ingredients into the dry ingredients until just combined. Don't overmix!
- Heat a lightly greased griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Melt butter in a saucepan over medium heat. Add brown sugar, heavy cream, cinnamon, and salt. Cook, stirring constantly, until the sugar is dissolved and the sauce is smooth.
- Add sliced bananas to the sauce and cook for 2-3 minutes, until softened and coated in the sauce.
- Remove the saucepan from the heat. Carefully pour in the rum (if using). Tilt the pan slightly and use a long match or lighter to ignite the rum. Let the flames burn off (approximately 10-15 seconds). Be very careful!
- Stack the pancakes on plates. Spoon the Bananas Foster topping generously over the pancakes. Serve immediately.
