Ingredients:

  • 1 1/2 cups (192g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 large ripe banana, mashed (approximately 1/2 cup)
  • 1 1/4 cups (300ml) milk (dairy or non-dairy)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • Butter or cooking spray for greasing the griddle
  • 4 tablespoons (57g) unsalted butter
  • 1/2 cup (100g) packed light brown sugar
  • 1/4 cup (60ml) heavy cream
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 2 large ripe bananas, sliced
  • 2 tablespoons dark rum (optional)

Instructions:

  1. Whisk together flour, baking powder, baking soda, salt, and sugar. In a separate bowl, combine mashed banana, milk, egg, and melted butter. Gently fold the wet ingredients into the dry ingredients until just combined. Don't overmix!
  2. Heat a lightly greased griddle or frying pan over medium heat. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  3. Melt butter in a saucepan over medium heat. Add brown sugar, heavy cream, cinnamon, and salt. Cook, stirring constantly, until the sugar is dissolved and the sauce is smooth.
  4. Add sliced bananas to the sauce and cook for 2-3 minutes, until softened and coated in the sauce.
  5. Remove the saucepan from the heat. Carefully pour in the rum (if using). Tilt the pan slightly and use a long match or lighter to ignite the rum. Let the flames burn off (approximately 10-15 seconds). Be very careful!
  6. Stack the pancakes on plates. Spoon the Bananas Foster topping generously over the pancakes. Serve immediately.
