Ingredients:

  • 1 cup (120g) all-purpose flour (plain flour)
  • 1/2 cup (45g) rolled oats (not instant)
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 ripe banana, mashed (about 1/2 cup)
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 1 large egg, lightly beaten
  • 2 tablespoons unsalted butter, melted (plus extra for greasing the pan)
  • 1 teaspoon vanilla extract
  • Maple syrup or honey (optional)
  • Fresh fruit (berries, banana slices) (optional)
  • Chopped nuts (walnuts, pecans) (optional)

Instructions:

  1. Whisk together flour, oats, sugar, baking powder, baking soda, and salt in a large bowl.
  2. In a separate bowl, mash the banana until mostly smooth.
  3. Add milk, egg, melted butter, and vanilla extract to the mashed banana and whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix. A few lumps are okay!
  5. Heat a lightly greased griddle or frying pan over medium heat. You should be able to flick a tiny bit of water onto the pan and it will dance on the surface when the pan is hot.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles begin to form on the surface and the edges start to set.
  8. Serve the pancakes immediately with your favourite toppings.
