Ingredients:
- 1 cup (120g) all-purpose flour (plain flour)
- 1/2 cup (45g) rolled oats (not instant)
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 ripe banana, mashed (about 1/2 cup)
- 1 cup (240ml) milk (dairy or non-dairy)
- 1 large egg, lightly beaten
- 2 tablespoons unsalted butter, melted (plus extra for greasing the pan)
- 1 teaspoon vanilla extract
- Maple syrup or honey (optional)
- Fresh fruit (berries, banana slices) (optional)
- Chopped nuts (walnuts, pecans) (optional)
Instructions:
- Whisk together flour, oats, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, mash the banana until mostly smooth.
- Add milk, egg, melted butter, and vanilla extract to the mashed banana and whisk until well combined.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix. A few lumps are okay!
- Heat a lightly greased griddle or frying pan over medium heat. You should be able to flick a tiny bit of water onto the pan and it will dance on the surface when the pan is hot.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles begin to form on the surface and the edges start to set.
- Serve the pancakes immediately with your favourite toppings.
