Ingredients:
- 1 cup (240g) unsalted peanut butter
- 1 cup (200g) light brown sugar, packed
- 1 large egg
- 1 teaspoon (5g) vanilla extract
- ½ teaspoon (2g) baking soda
- ¼ teaspoon salt
- 1 cup (130g) all-purpose flour
- ½ cup (160g) fruit jam (strawberry or grape recommended)
Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine peanut butter and brown sugar. Mix until smooth.
- Add egg, vanilla extract, baking soda, and salt. Mix well until blended.
- Gradually add flour, stirring until just combined.
- Scoop out dough and roll into balls (about 1 tablespoon each).
- Place dough balls on the prepared baking sheet, spaced apart.
- Use your thumb to make an indentation in the center of each ball.
- Fill each indentation with about ½ teaspoon of fruit jam.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
