Ingredients:

  • 1 cup (240g) unsalted peanut butter
  • 1 cup (200g) light brown sugar, packed
  • 1 large egg
  • 1 teaspoon (5g) vanilla extract
  • ½ teaspoon (2g) baking soda
  • ¼ teaspoon salt
  • 1 cup (130g) all-purpose flour
  • ½ cup (160g) fruit jam (strawberry or grape recommended)

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine peanut butter and brown sugar. Mix until smooth.
  3. Add egg, vanilla extract, baking soda, and salt. Mix well until blended.
  4. Gradually add flour, stirring until just combined.
  5. Scoop out dough and roll into balls (about 1 tablespoon each).
  6. Place dough balls on the prepared baking sheet, spaced apart.
  7. Use your thumb to make an indentation in the center of each ball.
  8. Fill each indentation with about ½ teaspoon of fruit jam.
  9. Bake for 10-12 minutes, or until edges are lightly golden.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
