Ingredients:
- 1 red bell pepper, seeded and chopped into 1-inch pieces (approx. 1 large, 150g)
- 1 yellow bell pepper, seeded and chopped into 1-inch pieces (approx. 1 large, 150g)
- 1 medium red onion, cut into 1-inch wedges (approx. 120g)
- 1 medium zucchini, chopped into 1-inch pieces (approx. 150g)
- 1 head broccoli, cut into florets (approx. 300g)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon dried Italian herbs (5 ml)
- ½ teaspoon garlic powder (2.5 ml)
- ¼ teaspoon salt (1.25 ml)
- ¼ teaspoon black pepper (1.25 ml)
Instructions:
- Wash and chop all vegetables into bite-sized pieces, roughly the same size for even cooking.
- In a large bowl, toss the chopped vegetables with olive oil, Italian herbs, garlic powder, salt, and pepper. Make sure everything is evenly coated.
- Preheat your air fryer to 400°F (200°C) for 2 minutes. Place the seasoned vegetables in the air fryer basket in a single layer. You may need to work in batches to avoid overcrowding.
- Air fry for 12-15 minutes, shaking the basket halfway through, until the vegetables are tender-crisp and slightly browned.
- Remove the vegetables from the air fryer and serve immediately.
