Ingredients:
- 1 lb smoked sausage, sliced into rounds
- 3 medium zucchini, sliced into 1/2-inch half-moons
- 1 medium yellow squash, sliced into 1/2-inch half-moons
- 1 medium red onion, coarsely chopped
- 3 cloves garlic, minced
- 2 tbsp extra virgin olive oil
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the sliced zucchini, yellow squash, and red onion with olive oil, minced garlic, Italian seasoning, salt, and pepper until evenly coated.
- Spread the seasoned vegetables and sliced sausage rounds across the baking sheet in a single layer, ensuring ingredients do not overlap to allow for proper airflow.
- Roast in the oven for 20–25 minutes until the sausage is browned and the zucchini shows golden-brown sear marks.
- Remove the pan from the oven and evenly sprinkle the grated Parmesan cheese over the top.
- Return the pan to the oven for an additional 5–10 minutes until the cheese is melted and bubbling.
- Garnish with chopped fresh parsley before serving.
