Ingredients:
- 1 medium red onion (about 200g)
- 1 cup (240ml) apple cider vinegar
- 1 cup (200g) water
- 2 tablespoons (30g) granulated sugar
- 1 tablespoon (15g) salt
- ½ teaspoon (2g) black peppercorns
- ½ teaspoon (2g) red pepper flakes (optional)
- 1 bay leaf (optional)
Instructions:
- Peel and slice the red onion into thin rings or half-moons.
- Place the sliced onion in a glass jar or container.
- In a medium saucepan, combine the apple cider vinegar, water, sugar, salt, black peppercorns, and red pepper flakes (if using).
- Bring the mixture to a boil over medium heat, stirring until the sugar and salt dissolve.
- Pour the hot pickling liquid over the sliced onions in the jar.
- Add the bay leaf if desired, ensuring the onions are fully submerged in the liquid.
- Allow the mixture to cool to room temperature, then seal the jar.
- Refrigerate for at least 30 minutes before serving to let the flavours develop.
