Ingredients:

  • 1 medium red onion (about 200g)
  • 1 cup (240ml) apple cider vinegar
  • 1 cup (200g) water
  • 2 tablespoons (30g) granulated sugar
  • 1 tablespoon (15g) salt
  • ½ teaspoon (2g) black peppercorns
  • ½ teaspoon (2g) red pepper flakes (optional)
  • 1 bay leaf (optional)

Instructions:

  1. Peel and slice the red onion into thin rings or half-moons.
  2. Place the sliced onion in a glass jar or container.
  3. In a medium saucepan, combine the apple cider vinegar, water, sugar, salt, black peppercorns, and red pepper flakes (if using).
  4. Bring the mixture to a boil over medium heat, stirring until the sugar and salt dissolve.
  5. Pour the hot pickling liquid over the sliced onions in the jar.
  6. Add the bay leaf if desired, ensuring the onions are fully submerged in the liquid.
  7. Allow the mixture to cool to room temperature, then seal the jar.
  8. Refrigerate for at least 30 minutes before serving to let the flavours develop.
