Ingredients:

  • 1 large red onion, thinly sliced
  • 1 cup apple cider vinegar
  • 1 cup granulated sugar

  • 1 teaspoon black peppercorns (optional)

Instructions:

  1. Slice the red onion thinly using a sharp knife or mandoline for even slices.
  2. In a medium bowl, combine apple cider vinegar, sugar, and salt. Whisk until the sugar and salt are fully dissolved.
  3. Add the sliced onions to the brine. If using, toss in peppercorns and crushed red pepper flakes for extra flavor.
  4. Allow the mixture to sit for at least 30 minutes at room temperature. For deeper flavor, refrigerate for up to 24 hours before use.
  5. Transfer the onions and brine to a clean jar. Seal tightly and store in the refrigerator.
