Ingredients:

- 1 cup apple cider vinegar

Instructions:
- Slice the red onion thinly using a sharp knife or mandoline for even slices.
- In a medium bowl, combine apple cider vinegar, sugar, and salt. Whisk until the sugar and salt are fully dissolved.
- Add the sliced onions to the brine. If using, toss in peppercorns and crushed red pepper flakes for extra flavor.
- Allow the mixture to sit for at least 30 minutes at room temperature. For deeper flavor, refrigerate for up to 24 hours before use.
- Transfer the onions and brine to a clean jar. Seal tightly and store in the refrigerator.
