Ingredients:

  • 1/2 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, finely minced
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Add the lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper into a mason jar. Whisk or stir these first to create a flavor concentrate.
  2. Pour in the extra virgin olive oil. Screw the lid on tight and shake vigorously for 30 seconds, or slowly drizzle the oil into a bowl while whisking constantly until the dressing is thickened and opaque.
  3. Taste the dressing with a leaf of the vegetable you plan to use. Adjust with a pinch more honey if too sharp, or more salt if it lacks pop.
