  • 2 tablespoons (30 ml) fresh lemon juice (about 1 medium lemon)
  • 1 teaspoon (5 ml) lemon zest (optional, for extra flavor)
  • Pinch of salt (to balance sweetness)

Instructions:

  1. Sift the powdered sugar into a mixing bowl to remove lumps.
  2. Add fresh lemon juice to the bowl, starting with 1 tablespoon.
  3. Whisk the mixture until smooth and combined. If too thick, gradually add more lemon juice, ½ teaspoon at a time.
  4. Mix in lemon zest if using, and a pinch of salt.
  5. Check the consistency; it should be pourable but thick enough to coat the back of a spoon.
  6. Drizzle over your cooled baked goods and let it set for a few minutes before serving.
