- 2 tablespoons (30 ml) fresh lemon juice (about 1 medium lemon)
- 1 teaspoon (5 ml) lemon zest (optional, for extra flavor)
- Pinch of salt (to balance sweetness)
Instructions:
- Sift the powdered sugar into a mixing bowl to remove lumps.
- Add fresh lemon juice to the bowl, starting with 1 tablespoon.
- Whisk the mixture until smooth and combined. If too thick, gradually add more lemon juice, ½ teaspoon at a time.
- Mix in lemon zest if using, and a pinch of salt.
- Check the consistency; it should be pourable but thick enough to coat the back of a spoon.
- Drizzle over your cooled baked goods and let it set for a few minutes before serving.
