- 1/2 cup extra virgin olive oil
- 1 teaspoon honey (optional, for sweetness)
- Salt and freshly ground black pepper, to taste
Instructions:
- Squeeze juice from lemons, straining out seeds.
- In a mixing bowl, whisk together lemon juice, Dijon mustard, and minced garlic.
- Slowly drizzle in olive oil while continually whisking until the dressing emulsifies.
- Stir in honey, if using, and season with salt and pepper to taste.
- Taste dressing and adjust seasoning or sweetness as needed.
- Transfer to a storage jar with a lid and refrigerate until ready to use. Shake well before serving.
