Ingredients:

  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon honey (optional, for sweetness)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Squeeze juice from lemons, straining out seeds.
  2. In a mixing bowl, whisk together lemon juice, Dijon mustard, and minced garlic.
  3. Slowly drizzle in olive oil while continually whisking until the dressing emulsifies.
  4. Stir in honey, if using, and season with salt and pepper to taste.
  5. Taste dressing and adjust seasoning or sweetness as needed.
  6. Transfer to a storage jar with a lid and refrigerate until ready to use. Shake well before serving.
