Ingredients:

  • 1 cup Mayonnaise
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Celery, finely diced
  • 2 tablespoons Green Bell Pepper, finely diced
  • 1 tablespoon Red Onion, finely minced
  • 1 tablespoon Fresh Parsley, finely chopped
  • 1 tablespoon Scallions (Green Onions), thinly sliced
  • 1 tablespoon Creole Mustard (or coarse ground mustard)
  • 1 tablespoon Horseradish, prepared
  • 1 teaspoon Lemon Juice, freshly squeezed
  • ½ teaspoon Paprika
  • ¼ teaspoon Cayenne Pepper
  • ½ teaspoon Hot Sauce (e.g., Tabasco)
  • Salt and freshly ground Black Pepper to taste

Instructions:

  1. Finely dice the celery, green bell pepper, and red onion. Chop the parsley and slice the scallions.
  2. In a mixing bowl, combine the mayonnaise, Dijon mustard, Creole mustard, horseradish, lemon juice, paprika, cayenne pepper, and hot sauce.
  3. Add the diced celery, green bell pepper, red onion, parsley, and scallions to the bowl.
  4. Season with salt and freshly ground black pepper, adjusting to your preference.
  5. Whisk all ingredients together until well combined. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
