Ingredients:

  • ½ cup (118 ml) packed fresh cilantro leaves, stems removed
  • ¼ cup (59 ml) fresh lime juice (from about 2-3 limes)
  • 2 tablespoons (30 ml) extra virgin olive oil
  • 1 tablespoon (15 ml) water
  • 1 clove garlic, minced
  • 1 tablespoon (15 ml) honey (or agave nectar)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions:

  1. Add all ingredients – cilantro, lime juice, olive oil, water, garlic, honey, salt, and pepper – to a blender or food processor.
  2. Blend on high speed until completely smooth and emulsified. The mixture should be a vibrant green color.
  3. Taste the vinaigrette and adjust the seasoning as needed. You might want to add more lime juice for extra tang, honey for sweetness, or salt and pepper to taste.
  4. Transfer the vinaigrette to an airtight container or jar. Store in the refrigerator until ready to use.
