Ingredients:
- ½ cup (118 ml) packed fresh cilantro leaves, stems removed
- ¼ cup (59 ml) fresh lime juice (from about 2-3 limes)
- 2 tablespoons (30 ml) extra virgin olive oil
- 1 tablespoon (15 ml) water
- 1 clove garlic, minced
- 1 tablespoon (15 ml) honey (or agave nectar)
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions:
- Add all ingredients – cilantro, lime juice, olive oil, water, garlic, honey, salt, and pepper – to a blender or food processor.
- Blend on high speed until completely smooth and emulsified. The mixture should be a vibrant green color.
- Taste the vinaigrette and adjust the seasoning as needed. You might want to add more lime juice for extra tang, honey for sweetness, or salt and pepper to taste.
- Transfer the vinaigrette to an airtight container or jar. Store in the refrigerator until ready to use.
