Ingredients:

  • 1 cup Long-grain white rice (rinsed well)
  • 1 ¾ cups Water or Vegetable Broth
  • 1 tablespoon Butter or Neutral Oil
  • ½ teaspoon Salt
  • ¼ cup Fresh Lime Juice
  • ½ cup packed Fresh Cilantro (finely chopped)
  • 1 teaspoon Lime Zest
  • ¼ teaspoon Garlic Powder (Optional)

Instructions:

  1. Rinse the rice thoroughly under cold running water in a fine-mesh sieve until the water runs clear. Drain completely.
  2. Combine the rinsed rice, water or broth, salt, and butter/oil in a medium saucepan. Bring rapidly to a boil over high heat.
  3. Once boiling, immediately reduce heat to the lowest setting, cover tightly, and cook undisturbed for 18 minutes.
  4. Remove the pot from the heat source while keeping the lid firmly in place. Allow the rice to rest and steam for a crucial 10 minutes.
  5. Remove the lid. Gently fluff the rice using a fork to separate the grains.
  6. Add the fresh lime juice, lime zest, finely chopped cilantro, and garlic powder (if using). Gently fold the flavourings through the hot rice until evenly distributed.
  7. Taste and adjust salt or lime as needed. Serve the Zesty Cilantro Lime Rice immediately.
