Ingredients:
- 1 cup Long-grain white rice (rinsed well)
- 1 ¾ cups Water or Vegetable Broth
- 1 tablespoon Butter or Neutral Oil
- ½ teaspoon Salt
- ¼ cup Fresh Lime Juice
- ½ cup packed Fresh Cilantro (finely chopped)
- 1 teaspoon Lime Zest
- ¼ teaspoon Garlic Powder (Optional)
Instructions:
- Rinse the rice thoroughly under cold running water in a fine-mesh sieve until the water runs clear. Drain completely.
- Combine the rinsed rice, water or broth, salt, and butter/oil in a medium saucepan. Bring rapidly to a boil over high heat.
- Once boiling, immediately reduce heat to the lowest setting, cover tightly, and cook undisturbed for 18 minutes.
- Remove the pot from the heat source while keeping the lid firmly in place. Allow the rice to rest and steam for a crucial 10 minutes.
- Remove the lid. Gently fluff the rice using a fork to separate the grains.
- Add the fresh lime juice, lime zest, finely chopped cilantro, and garlic powder (if using). Gently fold the flavourings through the hot rice until evenly distributed.
- Taste and adjust salt or lime as needed. Serve the Zesty Cilantro Lime Rice immediately.
