Ingredients:

  • 2 tablespoons olive oil (30 ml)
  • 1 medium onion, finely diced (about 1 cup, 150g)
  • 2 cloves garlic, minced (about 2 teaspoons, 6g)
  • 1 ½ cups long-grain rice, rinsed (300g)
  • 3 cups chicken broth or vegetable broth (720 ml)
  • ½ teaspoon salt (2.5g)
  • ¼ teaspoon black pepper (0.5g)
  • ¼ cup packed fresh cilantro leaves, chopped (about 10g)
  • Zest and juice of 1-2 limes, to taste (about 2-4 tablespoons lime juice, 30-60ml)

Instructions:

  1. Heat olive oil in the saucepan over medium heat. Add onion and sauté until softened, about 5 minutes. Add garlic and sauté for another minute until fragrant.
  2. Add the rinsed rice to the saucepan and toast, stirring constantly, for 1-2 minutes. This helps develop flavor and prevent stickiness.
  3. Pour in the broth, add salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover tightly with the lid, and simmer for 18-20 minutes, or until all the liquid is absorbed and the rice is tender. Do not lift the lid during this time!
