Ingredients:

  • 3 cups (540g) high-quality white chocolate chips
  • 1 can (14 oz / 397g) full fat sweetened condensed milk
  • 1/4 cup (56g) unsalted butter, cubed
  • 2 cups (100g) mini marshmallows
  • 1.5 tsp pure vanilla extract
  • 0.25 tsp fine sea salt

Instructions:

  1. Line an 8x8-inch square baking pan with parchment paper, leaving an inch of overhang on two sides to create a sling for easy removal.
  2. In a heavy-bottomed medium saucepan over low heat, combine the white chocolate chips, sweetened condensed milk, and cubed unsalted butter.
  3. Stir the mixture constantly with a silicone spatula. Heat only until the last chip vanishes and the liquid is a uniform ivory color; do not allow the mixture to boil.
  4. Remove the pan from the heat immediately. Gently fold in the mini marshmallows, pure vanilla extract, and fine sea salt until fully incorporated.
  5. Pour the mixture into the prepared pan and smooth the top. Refrigerate for at least 3 hours until firm before lifting out and cutting into 1-inch squares.
