Ingredients:
- 3 cups (540g) high-quality white chocolate chips
- 1 can (14 oz / 397g) full fat sweetened condensed milk
- 1/4 cup (56g) unsalted butter, cubed
- 2 cups (100g) mini marshmallows
- 1.5 tsp pure vanilla extract
- 0.25 tsp fine sea salt
Instructions:
- Line an 8x8-inch square baking pan with parchment paper, leaving an inch of overhang on two sides to create a sling for easy removal.
- In a heavy-bottomed medium saucepan over low heat, combine the white chocolate chips, sweetened condensed milk, and cubed unsalted butter.
- Stir the mixture constantly with a silicone spatula. Heat only until the last chip vanishes and the liquid is a uniform ivory color; do not allow the mixture to boil.
- Remove the pan from the heat immediately. Gently fold in the mini marshmallows, pure vanilla extract, and fine sea salt until fully incorporated.
- Pour the mixture into the prepared pan and smooth the top. Refrigerate for at least 3 hours until firm before lifting out and cutting into 1-inch squares.
