- 3 cups (450g) cooked chicken breast, shredded
- 1 can (15 oz / 425g) Great Northern beans, drained and rinsed
- 1 can (4 oz / 113g) chopped mild green chiles
- 1 tsp (5g) ground cumin
- 1/2 tsp (2.5g) garlic powder
- 1/2 tsp (3g) sea salt
- 1/4 cup (60ml) low-sodium chicken broth
- 2 cups (475ml) green enchilada sauce
- 1 cup (240g) full-fat sour cream
- 1 tbsp (15ml) fresh lime juice
- 1/2 cup (15g) fresh cilantro, chopped
- 12 small corn tortillas, halved or quartered
- 3 cups (340g) Monterey Jack cheese, freshly shredded
Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with a quick spray of oil or a rub of butter. Note: This prevents the bottom tortilla layer from sticking and tearing.
- In a large mixing bowl, combine the shredded chicken, drained beans, green chiles, cumin, garlic powder, salt, and chicken broth. Lightly smash 1/4 of the beans against the side of the bowl with a fork until a thick, starchy paste forms.
- In a separate medium bowl, whisk together the green enchilada sauce, sour cream, and lime juice until the mixture is completely smooth and pale green.
- Spread a thin layer of the sauce on the bottom of the baking dish. Place a layer of corn tortilla pieces over the sauce until the bottom is fully covered.
- Layer half of the chicken and bean mixture over the tortillas, spreading it evenly to the edges.
- Pour a portion of the sauce over the chicken, then sprinkle with 1 cup of Monterey Jack cheese until it looks like a snowy blanket.
- Repeat the layers: add the remaining tortillas, followed by the rest of the chicken mixture, the remaining sauce, and the final 2 cups of shredded cheese.
- Bake for 20-25 minutes until the cheese is bubbling and the edges are golden brown.
