  • 1 can (4 oz / 113g) chopped mild green chiles
  • 1 tsp (5g) ground cumin
  • 1/2 tsp (2.5g) garlic powder
  • 1/2 tsp (3g) sea salt
  • 1/4 cup (60ml) low-sodium chicken broth
  • 2 cups (475ml) green enchilada sauce
  • 1 cup (240g) full-fat sour cream
  • 1 tbsp (15ml) fresh lime juice
  • 1/2 cup (15g) fresh cilantro, chopped
  • 12 small corn tortillas, halved or quartered
  • 3 cups (340g) Monterey Jack cheese, freshly shredded

Instructions:

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with a quick spray of oil or a rub of butter. Note: This prevents the bottom tortilla layer from sticking and tearing.
  2. In a large mixing bowl, combine the shredded chicken, drained beans, green chiles, cumin, garlic powder, salt, and chicken broth. Lightly smash 1/4 of the beans against the side of the bowl with a fork until a thick, starchy paste forms.
  3. In a separate medium bowl, whisk together the green enchilada sauce, sour cream, and lime juice until the mixture is completely smooth and pale green.
  4. Spread a thin layer of the sauce on the bottom of the baking dish. Place a layer of corn tortilla pieces over the sauce until the bottom is fully covered.
  5. Layer half of the chicken and bean mixture over the tortillas, spreading it evenly to the edges.
  6. Pour a portion of the sauce over the chicken, then sprinkle with 1 cup of Monterey Jack cheese until it looks like a snowy blanket.
  7. Repeat the layers: add the remaining tortillas, followed by the rest of the chicken mixture, the remaining sauce, and the final 2 cups of shredded cheese.
  8. Bake for 20-25 minutes until the cheese is bubbling and the edges are golden brown.
