Ingredients:
- 1 cup (240 ml) heavy cream, chilled
- 7 oz (200 g) dark chocolate (60-70% cocoa), chopped
- 2 large eggs, separated
- 1/4 cup (50 g) granulated sugar
- 1 teaspoon vanilla extract
- 1 cup (100 g) Hello Panda chocolate-flavored cookies
- Additional whipped cream for garnish (optional)
Instructions:
- Place chopped dark chocolate in a heatproof bowl; set over a saucepan of simmering water. Stir until melted and smooth; set aside to cool slightly.
- In a separate bowl, whisk egg yolks and sugar until pale and creamy. Stir in melted chocolate and vanilla extract until combined.
- In a mixing bowl, whip the chilled heavy cream until soft peaks form; gently fold into the chocolate mixture.
- In another clean bowl, whip egg whites until stiff peaks form. Gently fold whipped egg whites into the chocolate mixture carefully to maintain volume.
- Crumble half of the Hello Panda cookies at the bottom of serving glasses. Spoon chocolate mousse over the cookies. Repeat with another layer of cookies and mousse.
- Cover with plastic wrap and refrigerate for at least 1 hour to set.
- Garnish with additional whipped cream and crushed cookies if desired.
