Ingredients:

  • 1 cup (240 ml) heavy cream, chilled
  • 7 oz (200 g) dark chocolate (60-70% cocoa), chopped
  • 2 large eggs, separated
  • 1/4 cup (50 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup (100 g) Hello Panda chocolate-flavored cookies
  • Additional whipped cream for garnish (optional)

Instructions:

  1. Place chopped dark chocolate in a heatproof bowl; set over a saucepan of simmering water. Stir until melted and smooth; set aside to cool slightly.
  2. In a separate bowl, whisk egg yolks and sugar until pale and creamy. Stir in melted chocolate and vanilla extract until combined.
  3. In a mixing bowl, whip the chilled heavy cream until soft peaks form; gently fold into the chocolate mixture.
  4. In another clean bowl, whip egg whites until stiff peaks form. Gently fold whipped egg whites into the chocolate mixture carefully to maintain volume.
  5. Crumble half of the Hello Panda cookies at the bottom of serving glasses. Spoon chocolate mousse over the cookies. Repeat with another layer of cookies and mousse.
  6. Cover with plastic wrap and refrigerate for at least 1 hour to set.
  7. Garnish with additional whipped cream and crushed cookies if desired.
