Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, cut into 1/2-inch (1.25cm) cubes
- 1 tablespoon soy sauce (15ml)
- 1 tablespoon cornstarch (8g)
- 1 teaspoon sesame oil (5ml)
- 1/4 teaspoon ground white pepper (Pinch)
- 1/4 cup soy sauce (60ml)
- 2 tablespoons oyster sauce (30ml)
- 1 tablespoon dark soy sauce (15ml)
- 1 tablespoon sesame oil (15ml)
- 1 tablespoon rice vinegar (15ml)
- 1 teaspoon granulated sugar (4g)
- 1/2 teaspoon ground ginger (1g)
- 1/4 teaspoon ground white pepper (Pinch)
- 1/4 cup chicken broth or water (60ml)
- 1 tablespoon cornstarch (8g)
- 2 tablespoons vegetable oil (30ml)
- 2 cloves garlic, minced (6g)
- 1 inch ginger, minced (Fresh ginger)
- 1/2 medium onion, thinly sliced (About 75g)
- 1 cup sliced mushrooms (About 100g, such as shiitake or button)
- 1 cup shredded cabbage (About 100g, Napa or green)
- 1 cup sliced carrots (About 100g)
- 1 cup bean sprouts (About 100g)
- 12 oz (340g) fresh or dried chow mein noodles (Egg noodles, see notes)
- 2 green onions, thinly sliced, for garnish
Instructions:
- In a bowl, combine chicken with soy sauce, cornstarch, sesame oil, and white pepper. Mix well and let marinate for at least 15 minutes (or up to 30 minutes in the fridge).
- In a separate bowl, whisk together all sauce ingredients until cornstarch is dissolved. Set aside.
- If using dried noodles, cook according to package instructions. Drain well. If using fresh noodles, loosen them up.
- Heat vegetable oil in a wok or large skillet over high heat. Add garlic and ginger and sauté for about 30 seconds, or until fragrant.
- Add marinated chicken to the wok and stir-fry until cooked through and lightly browned. Remove chicken from the wok and set aside.
- Add onion, mushrooms, cabbage, and carrots to the wok. Stir-fry for 3-5 minutes, or until vegetables are crisp-tender.
- Return the cooked chicken to the wok. Add bean sprouts and cooked noodles. Pour the chow mein sauce over the mixture.
- Toss everything together well to coat the noodles and vegetables with the sauce. Cook for 2-3 minutes, or until the sauce has thickened and everything is heated through.
- Garnish with green onions and serve immediately. Enjoy your Chicken Chow Mein.
