Ingredients:

  • 2 cups (300g) fresh seedless watermelon, cubed and chilled
  • 1 oz (30ml) fresh lime juice
  • 2 oz (60ml) Silver/Blanco Tequila
  • 0.5 oz (15ml) Cointreau or Triple Sec
  • 0.25 oz (7ml) Agave nectar
  • 1 tablespoon sea salt or Tajín for rimming
  • 1 cup ice cubes
  • 1 watermelon wedge for garnish
  • 1 sprig fresh mint

Instructions:

  1. Place the 2 cups of chilled watermelon cubes into a high-speed blender and pulse until completely liquefied. Pour the liquid through a fine-mesh strainer into a jar to remove excess pulp, yielding approximately 8-10 oz of fresh juice.
  2. Prepare the glass by running a lime wedge around the rim of a rocks glass. Dip the edge into a shallow plate of sea salt or Tajín seasoning.
  3. In a cocktail shaker, combine 3 oz of the prepared fresh watermelon juice, 2 oz tequila, 1 oz lime juice, 0.5 oz orange liqueur, and 0.25 oz agave nectar.
  4. Fill the shaker with ice and shake vigorously for 15 seconds until the exterior of the shaker is frosty.
  5. For the frozen version, skip the shaker and blend all ingredients (using 3 oz of the juice) with 1 cup of ice until slushy.
  6. Strain into the prepared glass over fresh ice. Garnish with a small watermelon wedge and a fresh mint sprig.
