Ingredients:
- 4 cups of watermelon, cubed (about 1/2 medium watermelon) - 600g
- 1 cup of feta cheese, crumbled - 150g
- 1/4 cup of fresh mint leaves, roughly chopped - 15g
- 1/4 red onion, thinly sliced - 50g
- 1 tablespoon of extra virgin olive oil - 15ml
- 1 tablespoon of balsamic vinegar or lemon juice - 15ml
- Salt and pepper, to taste
Instructions:
- Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
- Sprinkle the crumbled feta cheese and thinly sliced red onion over the watermelon.
- Add the roughly chopped mint leaves, stirring gently to combine.
- Drizzle with extra virgin olive oil and balsamic vinegar or lemon juice. Season with salt and pepper to taste.
- Toss gently until just mixed, then serve immediately.
