Ingredients:

  • 4 cups of watermelon, cubed (about 1/2 medium watermelon) - 600g
  • 1 cup of feta cheese, crumbled - 150g
  • 1/4 cup of fresh mint leaves, roughly chopped - 15g
  • 1/4 red onion, thinly sliced - 50g
  • 1 tablespoon of extra virgin olive oil - 15ml
  • 1 tablespoon of balsamic vinegar or lemon juice - 15ml
  • Salt and pepper, to taste

Instructions:

  1. Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.
  2. Sprinkle the crumbled feta cheese and thinly sliced red onion over the watermelon.
  3. Add the roughly chopped mint leaves, stirring gently to combine.
  4. Drizzle with extra virgin olive oil and balsamic vinegar or lemon juice. Season with salt and pepper to taste.
  5. Toss gently until just mixed, then serve immediately.
