Ingredients:

  • 225g (8 oz) Skirt Steak or Flank Steak, trimmed and thinly sliced against the grain
  • 1 tbsp (15 ml) Worcestershire Sauce
  • 1 tbsp (15 ml) Olive Oil or High-Heat Vegetable Oil
  • 1 tsp Smoked Paprika
  • Salt and Freshly Ground Black Pepper, to taste
  • 4 Large Eggs
  • 1 tbsp (15 ml) Double Cream or Whole Milk
  • 1 tbsp (15g) Unsalted Butter
  • 100g (3.5 oz) Sharp Cheddar Cheese, grated
  • 2 Everything Bagels
  • 4 tbsp (60 ml) Mayo
  • 1 tsp Dijon Mustard
  • 1/2 tsp Garlic Powder

Instructions:

  1. Prep and Seasoning: Slice the steak thinly against the grain. Place in a bowl, toss with Worcestershire sauce, paprika, salt, and pepper. Grate the cheese. Whisk the eggs vigorously with cream, salt, and pepper until light and foamy.
  2. Make the Sauce: In a small bowl, combine mayo, Dijon mustard, and garlic powder. Mix well.
  3. Toast the Bagels and Sear the Steak: Slice the bagels horizontally and toast them lightly. Heat the cast iron skillet over high heat until smoking hot. Add the olive oil, then quickly add the seasoned steak slices. Sear for 1-2 minutes per side until browned. Remove the steak from the pan and set aside, reserving any pan juices.
  4. Cook the Folded Eggs: Reduce the heat on a separate non-stick pan to medium-low. Add the butter until melted. Pour the egg mixture into the pan. As the edges set, gently push the cooked egg toward the center, tilting the pan so the uncooked egg runs underneath.
  5. Create Patties: Use a spatula to fold the eggs into squares roughly the size of the bagel halves (2 squares total). Cook until just set and fluffy.
  6. Assembly and Finishing: Preheat the broiler/grill to medium-high. Spread a generous layer of the Dijon mayo mixture on both the top and bottom halves of the toasted bagels.
  7. Layer: On the bottom half of each bagel, layer the seared steak, drizzling any pan juices over the meat. Place the grated Sharp Cheddar directly over the steak.
  8. Melt the Cheese: Place the bagel halves (steak and cheese side up) under the broiler for 30-60 seconds, or until the cheese is bubbling and melted.
  9. Final Assembly: Top the melted cheese layer with one folded egg square. Place the top bagel half on, press gently, and serve immediately.
