Ingredients:

  • 1/2 cup extra virgin olive oil
  • 3 tbsp lemon juice
  • 4 cloves minced garlic
  • 2 tbsp chopped fresh rosemary
  • 1 tsp coarse kosher salt
  • 1 tsp cracked black pepper
  • 1 tbsp red wine vinegar
  • 4 (8 oz) sirloin or filet steaks
  • 2 cloves halved garlic
  • 2 tbsp unsalted butter
  • 1 sprig fresh rosemary

Instructions:

  1. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, chopped rosemary, salt, pepper, and red wine vinegar.
  2. Place steaks in a shallow dish and pour the marinade over them, ensuring every surface is coated. Let marinate at room temperature for 15–30 minutes.
  3. Preheat the outdoor grill to high heat (approximately 450°F / 230°C).
  4. Using the halved garlic cloves, rub them vigorously over both sides of each steak just before grilling.
  5. Place steaks on the hottest part of the grill and sear for 5–6 minutes per side without moving them to develop a deep crust.
  6. Remove steaks from the grill once the internal temperature reaches 130°F (54°C) for medium-rare.
  7. Immediately place a pat of butter and a sprig of rosemary on each steak and allow them to rest for 10 minutes before serving.
