Ingredients:
- 1/2 cup extra virgin olive oil
- 3 tbsp lemon juice
- 4 cloves minced garlic
- 2 tbsp chopped fresh rosemary
- 1 tsp coarse kosher salt
- 1 tsp cracked black pepper
- 1 tbsp red wine vinegar
- 4 (8 oz) sirloin or filet steaks
- 2 cloves halved garlic
- 2 tbsp unsalted butter
- 1 sprig fresh rosemary
Instructions:
- In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, chopped rosemary, salt, pepper, and red wine vinegar.
- Place steaks in a shallow dish and pour the marinade over them, ensuring every surface is coated. Let marinate at room temperature for 15–30 minutes.
- Preheat the outdoor grill to high heat (approximately 450°F / 230°C).
- Using the halved garlic cloves, rub them vigorously over both sides of each steak just before grilling.
- Place steaks on the hottest part of the grill and sear for 5–6 minutes per side without moving them to develop a deep crust.
- Remove steaks from the grill once the internal temperature reaches 130°F (54°C) for medium-rare.
- Immediately place a pat of butter and a sprig of rosemary on each steak and allow them to rest for 10 minutes before serving.
