Ingredients:
- 2 lbs (900g) firm red tomatoes, finely diced
- 2 cups (300g) red onion, finely diced
- 2 cloves (6g) garlic, minced
- 1 cup (240ml) apple cider vinegar
- 1/2 cup (100g) brown sugar, packed
- 1 tbsp (15ml) lemon juice
- 1 tsp (6g) sea salt
- 1/2 tsp (1g) black pepper, freshly ground
- 1/4 tsp (1g) red chili flakes
Instructions:
- Dice the tomatoes and red onions into uniform 1/4 inch pieces to ensure even cooking.
- Combine the diced tomatoes, red onions, and minced garlic in a large heavy-bottomed saucepan.
- Stir in the apple cider vinegar, brown sugar, sea salt, black pepper, and red chili flakes.
- Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to a simmer.
- Let the relish bubble gently for 35–45 minutes until the liquid is reduced by half and the onions are translucent and mahogany-colored.
- Stir in the lemon juice during the final 2 minutes of cooking to brighten the flavors.
- Remove the pan from the heat and allow the relish to cool slightly in the pan to thicken before transferring to sterilized glass jars.
