Ingredients:

  • 2 slices bread (sourdough, white, whole wheat, or rye)
  • 2-3 tablespoons mayonnaise (full-fat or light)
  • 2-3 slices cheese (American, cheddar, provolone, Monterey Jack, or a blend)
  • (Optional) 1/2 tablespoon butter

Instructions:

  1. Spread mayonnaise evenly on one side of each slice of bread. Optional: Lightly butter the unoiled side of one of the slices.
  2. Place one slice of bread, mayo-side down, in the cold skillet or griddle. Layer cheese evenly on top. Place the second slice of bread on top of the cheese, mayo-side up.
  3. Turn the burner to medium-low heat. Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is completely melted and gooey.
  4. Using a spatula, carefully flip the sandwich and cook for another 3-4 minutes, or until the second side is golden brown and the cheese is fully melted.
  5. Remove from the skillet, cut in half, and serve immediately.
