  • 1/2 cup (100g) Granulated Sugar (for cookie layer)
  • 1/4 cup (50g) Packed Light Brown Sugar (for cookie layer)
  • 1 Large Egg (for cookie layer)
  • 1 teaspoon Vanilla Extract (for cookie layer)
  • 1 1/4 cups (150g) All-Purpose Flour (for cookie layer)
  • 1/2 teaspoon Baking Soda (for cookie layer)
  • 1/4 teaspoon Salt (for cookie layer)
  • 1 cup (170g) Semi-Sweet Chocolate Chips (for cookie layer)

Instructions:

  1. Line a 9x13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Melt butter and chocolate together using a double boiler or in the microwave.
  3. Whisk in sugar, then eggs and vanilla.
  4. Gently fold in flour, salt, and baking powder until just combined.
  5. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  6. Beat in the egg and vanilla extract.
  7. In a separate bowl, whisk together flour, baking soda, and salt.
  8. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  9. Stir in the chocolate chips.
  10. Chill the cookie dough in the refrigerator for 30 minutes.
  11. Pour the brownie batter into the prepared baking pan. Spread evenly.
  12. Drop spoonfuls of chilled cookie dough evenly over the brownie batter.
  13. Gently press the cookie dough into the brownie batter.
  14. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  15. Let the brookies cool completely in the pan before lifting them out using the parchment paper overhang.
