Ingredients:

  • 1 1/2 cups (190g) all-purpose flour, sifted (plus extra for dusting)
  • 3 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/4 cups (300ml) milk
  • 1 large egg, lightly beaten
  • 3 tablespoons (42g) unsalted butter, melted, plus extra for greasing
  • Optional: 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the sifted flour, baking powder, salt, and sugar. Sifting is key for fluffiness!
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
  3. Gently pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are fine; overmixing will result in tough pancakes.
  4. Preheat a lightly greased griddle or non-stick frying pan over medium heat. A drop of water should sizzle and evaporate quickly.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles begin to form on the surface.
  7. Serve hot with your favorite toppings. This pancakes recipe is very easy.
