- 3 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tablespoon granulated sugar
- 1 1/4 cups (300ml) milk
- 1 large egg, lightly beaten
- 3 tablespoons (42g) unsalted butter, melted, plus extra for greasing
- Optional: 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the sifted flour, baking powder, salt, and sugar. Sifting is key for fluffiness!
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
- Gently pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are fine; overmixing will result in tough pancakes.
- Preheat a lightly greased griddle or non-stick frying pan over medium heat. A drop of water should sizzle and evaporate quickly.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles begin to form on the surface.
